Can I use a boxed brownie mix?

Yes, a boxed mix works beautifully here.  Just bake it according to the package directions in a standard pan, let it cool completely, and then proceed with scooping and rolling into truffle bites. 

Do I have to add coconut oil to the chocolate?

No, you do not have to, but a teaspoon or two of coconut oil or vegetable oil helps the chocolate melt more smoothly and gives the coating a pretty shine.  If you skip it, the truffles will still taste great; the coating may just be a bit thicker and less glossy. 

How long do brownie truffle bites keep?

Stored in an airtight container in the refrigerator, these truffle bites generally keep well for about 4–5 days.  For gifting or parties, making them a day ahead works really well, and the texture stays nice and fudgy. 

Can I freeze brownie truffle bites?

Yes, they can be frozen.  Place them on a baking sheet to freeze solid, then transfer to an airtight container or freezer bag; thaw in the refrigerator and let them sit at room temperature briefly before serving for the best texture. 

What toppings work best?

Finely chopped pecans, holiday-colored chocolate candies, and Christmas sprinkles all work wonderfully and add both crunch and color.  You can also use chopped almonds, walnuts, or a drizzle of contrasting melted chocolate if you want to mix things up. 

Why are my brownie balls falling apart?

If the brownie mixture is too dry or cakey, it may not want to stick together.  Try using a fudgier brownie recipe, focusing on the soft center pieces, and really pressing the mixture together before you roll it into balls. 

Can I make these gluten-free?

Yes, you can use your favorite gluten-free brownie recipe or gluten-free boxed mix as long as it bakes up nice and fudgy, and then follow the same rolling and dipping method.  Just double-check that your chocolate chips and toppings are also labeled gluten-free if you are baking for someone with a gluten sensitivity. 

Brownie Truffle Bites

Ingredients

  • 1 pan of baked brownies completely cooled.
  • Use your favorite homemade brownie recipe or a boxed mix baked in a standard rectangular pan such as 9×13.
  • 2 cups semi-sweet chocolate chips this is the same as one 12-ounce bag.
  • 1-2 teaspoons coconut oil or vegetable oil to help the chocolate melt smoothly and look shiny.
  • Toppings choose any mix:
  • Very finely chopped pecans or pecan “meal”.
  • Red and green chocolate candies for Christmas color.
  • Holiday sprinkles or other chopped nuts if you like.

Instructions

Make and cool the brownies

  • Bake a pan of brownies and let them cool completely before you start rolling them into balls.
  • Leave the crisp outer edges for snacking; use the softer center for the truffle bites so they roll nicely.

Roll into brownie balls

  • Use a small cookie scoop so your truffles are all about the same size.
  • Scoop some brownie, press it together, then roll it between your palms until you have a smooth ball.
  • Place each ball on a parchment-lined baking sheet.
  • If the mixture starts sticking to your hands instead of forming balls, pause and wash/dry your hands, then keep going.

Chill the brownie balls

  • Put the tray of brownie balls in the freezer for about 15 minutes.
  • They do not need to be frozen solid, just firm enough so they hold up well when dipped in warm chocolate.

Melt the chocolate coating

  • Add 2 cups semi-sweet chocolate chips to a microwave-safe bowl.
  • Add 1–2 teaspoons coconut oil or vegetable oil directly to the bowl.
  • Microwave for 1 minute, then stir.
  • Continue microwaving in 30-second bursts, stirring well each time, until the chocolate is mostly melted and smooth; the last little bits will melt as you stir.
  • The finished chocolate should be smooth, creamy, and a bit shiny.

Dip and decorate

  • Take the chilled brownie balls out of the freezer.
  • Drop one ball into the melted chocolate, coat it fully, then lift it out with a fork.
  • Gently tap or shake the fork to let extra chocolate drip off the bottom.
  • Set the coated truffle back on the parchment-lined sheet.
  • While the chocolate is still wet, add toppings:
  • Sprinkle some finely ground pecans.
  • Press on 2–3 red and green chocolate candies.
  • Or use sprinkles or other nuts to make them festive.

Chill and clean up the edges

  • Refrigerate the dipped truffles until the chocolate is set.
  • Once set, if any have a “chocolate skirt” around the bottom, gently snap or trim off the extra chocolate with your fingers or a small knife for a neat look.
