Hearty Ham & Bean Soup

This delicious soup is the perfect, easy dish to make on those cold winter days! Made from simple things you probably have on hand, it takes less than 30 minutes to have it completely ready!

When it’s cold outside, nothing tastes better than a warm bowl of soup. This hearty ham & bean soup will definitely do the job!

It’s also the perfect way to use some leftover ham and turn it into a completely different delicious meal. With lots of good veggies and beans, it brings these foods that pair together so well.

What would I serve with this?

Just like any soup, it always goes well with a sandwich. This one would be wonderful with a grilled cheese sandwich, or just a simple piece of cheese toast. Since this soup is full of those great northern beans, it would also be so yummy with a big slice of cornbread!

Can I substitute any ingredients?

Yes! That’s one of the great things about soup. It is so versatile! If you notice, in the video, I substitute dry, minced onions for fresh onions and dried parsley for fresh parsley. You could also use vegetable broth instead of chicken broth and you could substitute a different bean for the great northern beans! Almost any bean is going to pair well with ham, so I don’t think you could go wrong!

Hearty Ham & Bean Soup

This flavorful soup is sure to please with simple ingredients that come together in just a few minutes! It's hearty and declicious!

Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2-3 cloves garlic, minced
  • 2 bay leaves
  • 1 tsp thyme
  • 1/2 tsp paprika (or smoked paprika)
  • 1 dash red pepper flakes
  • 4 cups chicken broth (or vegetable broth)
  • 2 cups chopped ham
  • 2 cans rinsed and drained great northern beans
  • kosher salt & pepper to taste
  • parsley for garnish (fresh or dried)

Instructions

  • Put olive oil in hot soup pot and saute' carrots, celery and onions for 3-5 minutes.
  • Add garlic and saute' for about 1 minute.
  • Add thyme and paprika and red pepper flakes.
  • Pour chicken broth over all this in the pot and bring to a low boil.
  • Add the bay leaves, ham and beans. Add salt & pepper to taste. Reduce heat and simmer for about 20 minutes.
  • Taste for seasonings and adjust as needed.
  • Add parsley and serve in bowls. Enjoy!
