Green Beans Almondine
This delicious dish has such a fresh flavor with a contrast of textures that will make your mouth happy! The combination of fresh green beans, sweet shallots and crunchy almonds with a splash of lemon juice really is a delight!
I just can’t think of a meal that these green beans would not complement. It is almost the perfect side dish. Quick, easy, fresh and flavorful bring a weeknight dinner up a level.

Even though this makes a great dish anytime, it’s sure to be a wonderful addition to any special meal as well! If you’re like me, you have certain dishes you always expect to have at those special holiday meals. But even then, sometimes a fresh take on an old standby can be a nice change. As a whole, I just really like this dish. The freshness of the green beans is so good. Pair that with the little bit of sweetness from the caramelized shallots and the crunchiness of the toasted almonds and it’s fantastic! Don’t forget about the kosher salt and pepper with that added splash of lemon juice at the end that gives it just the little bit of tanginess that makes the dish complete. Full of flavor and different textures, green beans almondine can’t be beat!
Green Beans Almondine
Ingredients
- 1 lb. fresh green beans, with ends trimmed
- 1 tbsp. kosher salt, plus more for seasoning
- 3 tbsp. butter
- 1/2 cup sliced almonds
- 2 medium shallots, thinly sliced
- 2 cloves garlic, minced
- 1-2 tbsp. lemon juice
- pepper to taste
Instructions
- In large pot, bring 6 cups water to a boil. Season with 1 tbsp. kosher salt.
- Add green beans to boiling water and blanche for 4-5 minutes, making sure to keep vibrant green color.
- While water is coming to a boil, melt butter in large skillet.
- Add sliced almonds and shallots to skillet and saute, stirring occasionally for 5-6 minutes.
- Add minced garlic to skillet and continue to saute for 3-4 minutes.
- Drain the green beans and add to the skillet. Stir together for 2-3 more minutes until tender.
- Stir in lemon juice and taste for seasonings.
- Add pepper and kosher salt to taste.
- Serve warm right away for best taste!
