Green Beans Almondine

Fresh and delicious green beans, with a hint of sweetness topped with toasted almonds.

Ingredients

  • 1 lb. fresh green beans, with ends trimmed
  • 1 tbsp. kosher salt, plus more for seasoning
  • 3 tbsp. butter
  • 1/2 cup sliced almonds
  • 2 medium shallots, thinly sliced
  • 2 cloves garlic, minced
  • 1-2 tbsp. lemon juice
  • pepper to taste

Instructions

  • In large pot, bring 6 cups water to a boil. Season with 1 tbsp. kosher salt.
  • Add green beans to boiling water and blanche for 4-5 minutes, making sure to keep vibrant green color.
  • While water is coming to a boil, melt butter in large skillet.
  • Add sliced almonds and shallots to skillet and saute, stirring occasionally for 5-6 minutes.
  • Add minced garlic to skillet and continue to saute for 3-4 minutes.
  • Drain the green beans and add to the skillet. Stir together for 2-3 more minutes until tender.
  • Stir in lemon juice and taste for seasonings.
  • Add pepper and kosher salt to taste.
  • Serve warm right away for best taste!
