Copycat Cracker Barrel Hashbrown Casserole
Have you ever had the delicious hashbrown casserole that Cracker Barrel serves? This recipe duplicates that recipe and to be honest, I think it’s even a little better than the one they serve!
Potatoes are always a hit as a side dish. Everybody loves them – kids and adults alike! This particular dish is really yummy and everyone always raves about it. But you want to know a little secret? It is so so easy to put together. Aren’t those the best recipes?

Make ahead!
I also love when a dish can be made ahead of time! When you’re preparing a large meal, it’s always nice to have those dishes that are already put together. You can do that with this one! Just put it all together the day before and have it ready to bake. I’ve even baked it a few hours before the dinner and then leave it covered in the warm oven. As long as it’s covered, it stays nice and fresh and no one ever knows you cooked it a little early!
Ingredients
- 1 bag 30 oz. hashbrowns I used cubed, but can use shredded.
- 8 oz. butter, melted
- 1 can cream of chicken soup
- 1 small onion diced
- 2 cups shredded cheddar cheese, divided
- 1 cup sour cream
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- Preheat oven to 350 degrees.
- Spray 9×13 baking dish.
- Mix all ingredients together, reserving 1 cup of cheese.
- Add mixture to baking dish and top with reserved 1 cup of cheddar cheese.
- Bake at 350 for 45 minutes to 1 hour.
