Copycat Cracker Barrel Hashbrown Casserole

Ingredients

  • 1 bag 30 oz. hashbrowns I used cubed, but can use shredded.
  • 8 oz. butter, melted
  • 1 can cream of chicken soup
  • 1 small onion diced
  • 2 cups shredded cheddar cheese, divided
  • 1 cup sour cream
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  • Preheat oven to 350 degrees.
  • Spray 9x13 baking dish.
  • Mix all ingredients together, reserving 1 cup of cheese.
  • Add mixture to baking dish and top with reserved 1 cup of cheddar cheese.
  • Bake at 350 for 45 minutes to 1 hour.
