Crockpot Jamaican Jerk Chicken

Starting with chicken thighs, which is one of the cheapest chicken choices, you’ll add your homemade sauce made of onions, jalapenos, brown sugar, soy sauce, vinegar and a few spices.

What to pair with it:

There are lots of choices of things that would go well with this, but here are some of our favorites. I ususally serve the chicken over rice. The rice helps to soak up some of that good sauce from the chicken and just adds a really yummy addition to the meal. We also love simple fried plantains with this dish! You could also add some roasted veggies of choice, or some grilled pineapple would be delicious too!

How long does this cook?

One of the nice things about this dish is that it cooks for 8 hours! That’s perfect for anyone who is gone all day to work. Put it in the crockpot in the morning before work, and it’s ready when you get home! You could even make the sauce the night before, leave it in the fridge and it would literally take less than 10 minutes to put it all together in the crockpot the next morning! I’ve never done it, but I think you could even do the quick brown on the chicken, and place it and the sauce in the crockpot insert the day before as well. Then you’d only have to take it out of the fridge and pop it into the base of the crockpot and turn it on the next morning before going to work!

Crockpot Jamaican Jerk Chicken

Ingredients

  • 6 chicken thighs (bone in & skin on)
  • 3 green onions
  • 1/2 diced yellow onion
  • 1/2-1 diced jalapeno
  • 1/3 cup soy sauce
  • 1/4 cup white vinegar
  • 2 tbsp vegetable oil
  • 1 tbsp brown sugar
  • 2 tsp thyme
  • 1/4 tsp ground cloves
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice

Instructions

  • Brown chicken thighs in skillet on high heat for 3-4 minutes on each side.
  • Mix all other ingredients and blend. (Use blender or food processor for this).
  • Place chicken in the crockpot and pour sauce over all the chicken.
  • Cook on low for 8 hours.
