Savory Chicken and Rice Soup

This soup is so simple, but has such depth of flavor. It’s delicious anytime, but it’s also our go-to soup whenever we don’t feel quite well. It’s a definite comfort food that tastes so good even when you’re not sure you want anything to eat!

At first glance, you might not think this recipe looks like anything special. But when you are looking for a new soup recipe, do not pass this one by! Even though the ingredients for this are so basic, the combination in every bite just feels like a warm hug on a cool day! The simplicity of it is just an added bonus.

Since you will most likely have many of the ingredients on hand to make this soup, you can cook up a big pot in a hurry! About 5 minutes of prep time and 30 minutes of cook time, and you’re finished. Who doesn’t like that?!

How to Make it a Meal:

Because this is such a basic soup, it pairs well with so many things! You could serve a small cup of it before your main dinner if you like. We have a favorite restaurant that has a similar soup they serve like this and we always look forward to it. You can also make it a whole meal when paired with a salad, or a sandwich! Honestly, just open a pack of crackers and eat a big bowl of it by itself if you want!

I even show you how I keep the rotisserie chicken bagged up in my freezer and ready for this! Then when you hear of anyone with a cold or flu, or something similar, you can pull out a. bag of chicken, and have this soup ready to take them in less than an hour!

Savory Chicken and Rice Soup

Cook Time 30 minutes
Serving Size 8

Ingredients

  • 6 cups water (Can use chicken broth if preferred)
  • 6 tsp premium better than bouillon (roasted chicken flavor) (You can use bouillon cubes if preferred)
  • 3/4 cup white rice
  • 1-2 tsp minced garlic (I use squeeze garlic)
  • 1-2 tbsp dried minced onion flakes
  • 1/2 tsp salt
  • 1-2 tsp italian seasonings
  • 2 cups shredded or chopped rotisserie chicken
  • 1 cup heavy cream

Instructions

  • Boil water and chicken bouillon in large pot.
  • Once water is boiling, add your rice, garlic, onion flakes, other seasonings and turn on low, place lid on and cook for 20 minutes.
  • After 20 minutes, your rice is cooked and you can add the chicken.
  • Let it cook about 5-10 minutes with the chicken and the heavy cream. Make sure it's on low to medium/low heat at this point!
  • Taste and adjust seasonings if needed.
  • Enjoy!
