Tomato Basil Tortellini Soup
This delicious soup has layers of flavor that take it to the next level. Combined with the tortellini’s heartiness, it becomes such a satisfying meal!
It’s hard to go wrong with a simple meal of a bowl of tomato soup and a grilled cheese sandwich! It’s even a good way to get most kids to eat some ‘veggies’ in soup form! (Yes, I know tomatoes are technically a fruit, but we use them more as a veggie, don’t we)! This soup is the grown-up version of that meal.

You build those layers of flavor right from the start with cooking the onions and garlic in a little olive oil. Then you build the flavor with the tomatoes, sauce and chicken broth. Adding in those herbs and spices bring in the final layer of flavor and completes this soup in the perfect way!
How long does this take from start to finish?
Some soups need a lot of time to simmer and bring all the flavors and broth together. While this soup does simmer for just a few minutes, you won’t need long. Because of the way you layer the flavors in this Tomato Basil Tortellini soup, you can have dinner on the table from start to finish in just about 35-40 minutes!
How would you serve this?
Because this soup is so hearty with the tortellini in it, you can absolutely make a meal of it all by itself! However, the addition of some of your favorite large croutons on top will give it that extra special texture and crunch that you might crave along with it. Also, you can never go wrong by adding a yummy grilled cheese sandwich to a hearty bowl of this soup! Can I change the ingredients?
Yes, you can play around with this and make the version you and your family like! You could use chunkier tomatoes in the soup, or use all sauce if you prefer instead of the combination of sauce & tomatoes. You could leave out the tortellini if you simply want tomato soup. You’ll still get lots of flavor from the soup without that addition! I’ve also added sun-dried tomatoes at times, which brings a deeper & sweeter tomato flavor. It’s very versatile and I’m sure it will be delicious with these small changes.
Tomato Basil Tortellini Soup
Ingredients
- 1 diced onion
- 1 tbsp minced garlic
- 1 tsp olive oil
- 1/2 tsp crushed rosemary
- 28 oz diced tomatoes
- 15 oz tomato sauce
- 1/2 tsp oregano
- 1/2 tsp basil
- 1/2 tsp salt
- 1/4 tsp pepper
- 4 cups chicken broth
- 1/2 cup heavy cream
- 20 oz frozen three cheese tortellini
- 1/2 cup shredded parmesan cheese (more for topping as desired)
Instructions
- In a large pot over medium heat, pour the olive oil once the oil is hot add in the onion, garlic and rosemary. Saute for 5 minutes or until the onion is soft.
- Add diced tomatoes, tomato sauce, broth, oregano, basil, salt and pepper, and heavy cream and stir. Bring to a low simmer for 20 minutes covered. Stir frequently.
- Add tortellini and cook 12 – 14 minutes, or until the tortellini is completely cooked. Once finished stir in parmesan cheese.
- Serve topped with extra parmesan cheese or croutons as desired.
