Tomato Basil Tortellini Soup

A delicious homemade tomato soup that has a depth of flavor to make a hearty meal!

Ingredients

  • 1 diced onion
  • 1 tbsp minced garlic
  • 1 tsp olive oil
  • 1/2 tsp crushed rosemary
  • 28 oz diced tomatoes
  • 15 oz tomato sauce
  • 1/2 tsp oregano
  • 1/2 tsp basil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 4 cups chicken broth
  • 1/2 cup heavy cream
  • 20 oz frozen three cheese tortellini
  • 1/2 cup shredded parmesan cheese (more for topping as desired)

Instructions

  • In a large pot over medium heat, pour the olive oil once the oil is hot add in the onion, garlic and rosemary. Saute for 5 minutes or until the onion is soft.
  • Add diced tomatoes, tomato sauce, broth, oregano, basil, salt and pepper, and heavy cream and stir. Bring to a low simmer for 20 minutes covered. Stir frequently.
  • Add tortellini and cook 12 – 14 minutes, or until the tortellini is completely cooked. Once finished stir in parmesan cheese.
  • Serve topped with extra parmesan cheese or croutons as desired.
