Italian Sausage Impossible Pie

A savory Bisquick Impossible Pie with browned Italian sausage, onion, green pepper, and Italian cheese. The batter makes its own crust as it bakes — no rolling, one skillet, on the table in under an hour.

Ingredients

Filling

  • 1 lb ground Italian sausage
  • 1/2 cup onion diced
  • 1/2 cup green bell pepper diced
  • 1 tsp garlic minced
  • 2 cups shredded Italian blend cheese

Batter

  • 3 large eggs
  • 3/4 cup Bisquick
  • 1 1/3 cups evaporated milk
  • 1 tsp dried parsley
  • 1 tsp dried oregano
  • 1 tsp dried basil

For Serving

  • marinara sauce warmed
  • fresh parsley chopped

Instructions

  • Preheat the oven to 400°F. Grease a 9-inch deep-dish pie plate (a little olive oil wiped around with a paper towel works if you're out of cooking spray).
  • In a skillet over medium heat, brown the Italian sausage with the diced onion and green pepper, breaking the meat up as it cooks, until most of the pink is gone. Stir in the garlic during the last minute. The vegetables don't need to be fully soft — they'll finish in the oven.
  • Turn off the heat. Blot or drain any excess grease.
  • Stir the shredded Italian cheese into the warm sausage mixture. Spoon it into the greased pie plate and spread it out evenly.
  • In a bowl, whisk the eggs. Add the Bisquick and evaporated milk and whisk until smooth. Stir in the parsley, oregano, and basil.
  • Pour the batter slowly over the sausage mixture. It will settle in on its own. Do not overfill the pie plate — leave a little batter behind if needed. Set the pie plate on a rimmed baking sheet.
  • Bake for about 25 minutes, until the top is golden brown and the center is set (a knife inserted in the center comes out clean).
  • Let the pie rest 5 minutes, run a knife around the edge, and slice. Serve with warm marinara drizzled over each piece and a sprinkle of chopped parsley.

Notes

  • Cheese: Any Italian cheese works — mozzarella, Parmesan, provolone, or Asiago. Use what you have.
  • No Bisquick? Use the same amount of self-rising flour plus about 1 tablespoon vegetable oil. Do not substitute all-purpose flour.
  • Milk: Whole milk can replace the evaporated milk in the same amount; evaporated makes it a little richer.
  • Pie plate: This is a full pie. A standard shallow 9-inch plate will overflow — use a 9-inch deep-dish plate and bake on a sheet pan.
  • Seasoning: We didn't add salt or pepper since the sausage and cheese are already seasoned. Season to taste if using a milder meat.
  • Leftovers: Refrigerate up to 3 days; reheat in a 350°F oven about 10 minutes. Freezes well for up to 2 months.
