Chicken Caesar Wraps — A Whole Family Dinner for Under $10
Four ingredients. One griddle. About fifteen minutes from start to supper.
If you need a quick dinner that doesn’t taste like a compromise, this is the one. Ground chicken gets pressed thin onto a tortilla, crisped on the griddle until the chicken is cooked through and the tortilla is golden, then filled with cold, crunchy Caesar salad straight out of the bag. No measuring, no chopping, no sink full of dishes.

Where This One Came From
I’ll be honest with you — I had never made this until the day we filmed it.
Our daughter-in-law is the one who told me about it. She’s a school teacher, and school has already started here in Alabama, so she is busy. You know how that first week or two goes. She’s made these several times and she has mentioned them to me at least twice, maybe three times, telling me how good they are and how fast they come together.
So I finally decided we’d try it, and we’d try it right here with you, and we’d find out together whether she was right.
There’s something I love about a recipe like this. It doesn’t feel like a whole lot of cooking. But it’s one of those meals we all need — the quick go-to you can pull off after a long day when everybody’s hungry and there’s somewhere to be. And you still get some vegetables in there with the salad, so you’re not feeling like you cut every corner.
I also love that you don’t need exact measurements for it. If you’re cooking for one or two, make a couple. If you’ve got a big crowd, make six or eight. You just adjust it to what you need.
Now, the taste test. I thought it was really good — especially for the effort it takes and what it costs. That’s a lot of bang for your buck. Darren agreed it had good flavor, though he thought his was a tad too salty. That’s probably on me. I was sprinkling the salt over four wraps at once and I may not have been perfectly even about it. So go a little light on the salt and let everybody add their own if they want more.
But the real test around here is always the same question: would you eat it again? And the answer was yes. So this one’s a winner.
Chicken Caesar Wraps

Ingredients
- 1 pound ground chicken
- 4 small flour tortillas
- 1 bag Caesar salad kit (lettuce, dressing, parmesan, and crouton crumbs included)
- Salt, to taste
- Coarse ground black pepper, to taste
- Garlic powder, to taste
Instructions
- Make the salad first. Empty the Caesar salad kit into a bowl — the lettuce, the seasoning packet, the parmesan, the crouton crumbs — and toss it with the dressing. This dish comes together so fast that you want the salad ready and waiting. We don’t want that dressing sitting on the lettuce too long, but a few minutes won’t hurt a thing.
- Heat your griddle to 350°F. If you don’t have a griddle, a skillet on the stove works just fine, especially if you’re only making one or two.
- Spread the chicken. Take a bit of the raw ground chicken and spread it in a thin, even layer all the way across a tortilla, leaving just a little bare space around the edge. You want it thin — that’s how it cooks through so quickly. Repeat until you’ve got all four ready to go on the griddle at the same time.
- Season the chicken side with a light sprinkle of salt, then pepper, then garlic powder. Go easy on the salt and let people add more at the table. The garlic pairs really well with that Caesar, so don’t skip it.
- Griddle chicken-side down for about 4 minutes, until the chicken is cooked all the way through. I didn’t use any oil or grease on mine because it’s a good nonstick griddle — but if yours needs a little something, go ahead and add it.
- Flip and crisp. Turn them over and let the tortilla crisp on the outside for about a minute. They’ll smell wonderful right about here.
- Fill and serve. Spoon some of that cold Caesar salad down the middle of each one. If your tortillas are small, hold them open like a taco. If you used bigger ones, roll them up all the way. Serve immediately, while the tortilla is still crisp and the salad is still cold — that contrast is the whole point.
Frequently Asked Questions
Do I have to use a griddle? No. A skillet on the stove over medium heat works great, especially for one or two wraps. The griddle is just handy when you want to cook four at once.
Can I use ground turkey or ground beef instead? Yes. Ground turkey behaves almost exactly the same. Ground beef works too, though it renders more fat, so you may want to blot the tortilla before you flip it.
